Reef Rum Supply, Appleton Estate, and the "Seagroni" In the first week of May, Reef Rum Supply sank a barreled Appleton Estate Negroni to the bottom of the ocean. Today, we open that barrel… want a taste? Reef Rum Supply ages barreled cocktails underwater, off the coast of Miami. This "submarine cellaring," under increased atmospheric pressure and in dynamic conditions, produces startling and unique results — like in their rum-based "Seagroni." Eddie Odabachian and Billy Dalla Pola will discuss their methods, and share the results of their extensive research on this fascinating (and slightly unhinged) subject. And St. John Frizell of Sunken Harbor Club will discuss his own experiments with underwater aging in Bermuda! They will be joined by the Deputy Master Blender at Appleton Estate himself, David Morrsion! Various versions of the Appleton Negroni — aged on land, aged at sea, and unaged — will be served. This is a 60-minute seated presentation, preceded by a 30-minute cocktail party. The Dolphin Bar will be open to the public after the presentation.
